An emerging risk factor - its importance, assessment and development.
The food safety practices used within a business are a combination of the management systems and operating procedures it uses, linked to the level of compliance with them. Mere possession of a management system does not ensure compliance and food handlers often do not implement good food safety practices. This may be due to individual food handler factors or, more often, due to the prevailing food safety culture within a business. The concept of a business food safety culture is seen as an emerging risk factor in outbreaks, having been mentioned in two recent food poisoning inquiry reports.
