CPD Event 3 - Pathogen Update

Date: 12th May 2010

A review of important food related pathogens.

There is a race in public health between "our ability to detect pathogens and our ability to control them". Whilst some pathogens have become regarded as "traditional problems", it is estimated that a new food related pathogen is identified every 16 months.  This one-day seminar reviews the broad spectrum of food pathogens and then focuses on four of the most important so-called "emerging pathogens" ie E.coli O157, campylobacter, norovirus, and listeria.

After attending the seminar, delegates will be able to:

  • List and characterise the main food related pathogens including so-called traditional pathogens such as salmonella, clostridium and staphyloccocus species
  • Define the term ‘emerging pathogen’ and explain why a country gets the pathogens it deserves including where applicable Vibrio vulnificus and nvCJD
  • Characterise E.coli O157 and other STECs and outline control strategies for a range of businesses
  • Characterise campylobacter and related organisms and discuss control strategies for outbreak prevention
  • Characterise norovirus as one of the world's most infectious organisms and outline control and prevention strategies
  • Assess the significance of listeria species in foods and outline a Listeria monocytogenes control strategy
