In spite of advances in HACCP and food safety management, food transmitted diseases remain a major cause of human mortality and morbidity, as well as food spoilage.
It is important for anyone with a responsibility for food safety or quality to have a base level of microbiological knowledge and understanding to enable them to make informed decisions in food production, processing and inspection.
After attending this one-day seminar, delegates will be able to:
- List and characterise the main groups of micro-organisms able to cause food transmitted diseases
- Distinguish between microbial survival and growth and link knowledge of a pathogen's properties to hazard analysis, food poisoning and food processing
- Outline the process and rationale behind microbial testing
- Compare traditional and rapid test methods
- Interpret microbiological test data and explain how they assist in the production of safe food
